Green Chili Demonstration-Lesbians over 40
Meetups are a great way to meet new people and try something new. Several women, from the Lesbians Over 40 Meetup, recruited Laurie to demonstrate an easy way to create great green chili. During a Broncos Sunday, we got the steps to making a green chili that hits the spot. Laurie is from the old school of cooking where measuring cups were never needed. So, we had to keep a close eye on her as she added a handful of this and a pinch of that. Enjoy the recipe below.
Laurie’s Green Chili
- 1 raw chicken breast
- olive oil
- 3 T. (heaping) flour
- approximately 3 c. water
- 1 1/2 t. of minced garlic
- 1 1/2 c. chopped roasted green chilies
- 1/8 t. cumin
- 2 T. garlic salt
Brown the chicken in the olive oil. After its cooked, remove from the pan and chop into small pieces. Return to the pan and add 3 T flour and continue to brown the mixture. Once the chicken and flour are browned, slowly add approximately 3 cups water until the sauce has the desired consistency. Gradually add the chili. Roasted chilies can very in their hotness and it’s better to be cautious when adding them. Add as many as you need to get your desired level of heat. Season with the cumin and garlic salt. Stir well and then simmer for 20 min. Serve it up by the bowl, on burritos, or eggs. Yum! Laurie also substitutes pork for the chicken as a tasty option.
